Sparkling Rosé Strawberry Granita

  • 3 cups halved strawberries
  • 1/4 cup lime juice
  • 1/4 cup granulated sugar
  • 1/4 cup honey
  • 1 bottle Chateau St. Jean California Sparkling Rosé


  1. Toss together strawberries, lime juice, sugar and honey; stir in 1/2 cup water. Transfer to food processor; purée until smooth.
  2. Pour into 13- x 9-inch metal pan. Place on flat surface in freezer for about 1 hour or until just starting to freeze. Remove granita mixture from freezer; stir well with wooden spoon or whisk to break up crystals.
  3. Return to freezer; freeze for 1 hour, then repeat stirring process. Return to freezer, stirring every 30 minutes, until mixture has completely crystallized and thick grainy slush has formed. Keep frozen until ready to serve.
  4. Scrape scoop of granita into 8 coupe glasses; top with sparkling rosé. Serve immediately.

Tip: Garnish with fresh strawberries and torn lemon balm leaves if desired.
